Ingredients for 2 persons: 200 g broccoli, 1.5 Egg Protein Shmaks, 1 tbsp plain flour, 20 g butter, 2 eggs, milk as needed, 50 g hard cheese, 1 tbsp coarse flour, 5 g butter, salt, green parsley.
Boil the broccoli briefly (over steam) and break into florets. Make a light roux from the butter and plain flour, dilute with milk and boil. Stir the egg, diced egg protein, broccoli florets, green parsley and salt into the cooled béchamel. Mix the mixture thoroughly and place in a baking dish that has been greased with butter and dusted with coarse flour. Bake and shortly before finishing sprinkle with grated cheese and finish baking. Can also be baked with cauliflower – separately or together.
